The CPI team is pleased to announce that the Hog Carcass Lymph Node System Handbook is now available. The handbook was developed and published by Canada Pork International (CPI) and is available for distribution in both print and e-version for CPI members and stakeholders. The handbook is offered in French and English. The lymph node system handbook was developed to provide accurate locational information based on the eviscerated hog carcass and subsequent primal cuts as commonly fabricated in Canadian pork processing plants. The handbook can assist primary processors, end-user customers, and quality and safety regulators with a common understanding of the pig lymph node system. This handbook was made possible through the collaboration of the following individuals and organizations who have generously shared their knowledge, expertise and technical skills: Special thanks to the Agriculture and Agri-Food Canada Lacombe Research and Development Centre (AAFC-LaRDC) butchers and swine barn staff, University of Calgary staff who contributed their expertise on several occasions, and to Dr. Nic Rousset of the Western Veterinary Specialist and Emergency Centre in Calgary who conducted the CT scanning. Research partners were Dr. Robert McCorkell of the Faculty of Veterinary Medicine at the University of Calgary, Brad McLeod and Dave Hale of the National Meat Training Centre at Olds College, Dr. Bethany Uttaro of AAFC-LaRDC, and Michael Young of Canada Pork International (CPI).
