CPI is launching the Canadian Pork Quality Standards (CPQS) tool for colour and marbling. Developed in collaboration with the Canadian Centre for Swine Improvement (CCSI) and Agriculture and Agri-Food Canada (AAFC), the ruler is designed for subjective evaluations in production situations requiring selection or exclusion of specific meat quality attributes.

These standards include a representative spectrum scale for meat colour (0-6), fat colour (0-4) and intramuscular fat (marbling 0-6). The ruler is plasticized with a metal eyelet to ensure detection on the production line if misplaced.

This tool was developed for use by CPI members and may be used for quality control efforts by your organization and the Canadian pork industry.

The Canadian Pork Quality Standards tool for colour and marbling is on sale at $45 each ruler, including HST.
