The CPI team has completed the development and production of an important resource for lymph node identification and location. The illustrated chart features the names and locations of all nodes shown on an intact carcass. It includes both a medial and lateral view for easy reference on one chart.

The identification and removal of lymph nodes in specific pork cuts and source specific trimmings can be a requirement to access some markets of interest to Canadian pork exporters.

CPI is now in the process of developing and producing a 15-page handbook which will provide the user with comprehensive information focused on the identification, location and removal of lymph nodes based on each primal cut.

The laminated chart is currently available from CPI Ottawa. The lymph node handbook will be completed and available for distribution in February 2016. Both of these resources will be available as a download or printed copy, in French and English, and will be included in the next edition of the Canadian Pork Handbook scheduled for release year end 2016.
